CHEROKEE BISON FARMS >> RECIPES > the Best Bison Chili

* 1 lb ground bison
* 2 -3 medium sliced tomatoes
* 1/2 c. sliced fresh onion
* 3 T. chili powder
* 1 (15 oz) can hot chili beans
* 1 (48 oz) can vegetable juice (V-8)
* 1 (21 oz) can best baked beans
* dash garlic powder
* 1 (15 oz) can great northern beans
* 1 1/2 c. uncooked macaroni
* 1 (6 oz.) can butter beans
* 1/4 c. sliced red pepper (optional)

Instructions

Brown thawed bison in large soup pot on medium heat.  Add onions, chili, baked, northern and butter beans, tomatoes, red pepper and chili powder.  Let simmer on low heat about 10 minutes, stirring often to prevent sticking to the bottom of the pot.  Add vegetable juice, 1 cup water and garlic powder.  Let simmer on low for 15 minutes.  Add macaroni and simmer again until macaroni is tender, stirring often.    Serve hot, topped with grated cheddar cheese and a dollop of sour cream, if desired.
